Ryan and I try to test out a new recipe at least once every other week. Actually, as I type this I’m waiting for a meatloaf recipe we’re testing out to come out of the oven! I’m really not a great cook but this has been a great way to learn and get better, I can already tell I’m improving! It’s really just about finding a great recipe. We’ve definitely had some misses but we’ve also discovered some staple favorites that I wanted to share with you today. The two recipes I’m sharing with you today are Whole 30 approved!

Skinny Taste Stuffed Pepper Soup
Growing up, stuffed peppers were my favorite meal so I have pretty high standards when it comes to stuffed pepper recipes. If you haven’t tried actual stuffed peppers, Skinny Taste has a great recipe that I prefer in the summer months but I have to say nothing will ever beat mom moms Stuffed Peppers. Maybe someday I’ll post that for you guys! Anyways, for the colder winter months, this hearty stuffed pepper soup is perfect. The ingredients are fairly simple – ground beef, red and green bell peppers, garlic, onion, diced tomatoes, tomato paste and some spices. The recipe also calls for rice but Ryan and I use cauliflower rice and its just as amazing. The best part is that you can make it in an Instant Pot which makes it SO easy. Also, each serving is only 285 calories but you’d never be able to tell! This is very guy friendly as well, if you’re looking for healthy recipes your man will love – Ryan loves this one!
40 Aprons Eggroll in a Bowl
Ok guys, this egg roll in a bowl recipe game changer. This is probably one of Ryan’s all time favorite meals and I think we could both eat it at least once a week for the rest of our lives -its that good. The flavors are absolutely perfect and it is also healthy and Whole 30 approved! WHAT?! Dreams do come true! I’ve truly never had anything else that tastes like this. Its the perfect combination of spicy and hearty and fresh. I also love that this recipe features a Whole 30 healthy recipe for spicy mayo which you could use for other meals as well! This is another super easy recipe that you can easily make on a week night.
