My mom has always told me that it’s not hard to be a good cook you just need to find a good recipe! haha! Ryan and I really enjoy cooking and trying new recipes. Despite the fact that we’ve had quite a few failures, we have found a lot of recipes that we really love. I wanted to share a few of our favorites that are great for those of you who are doing more cooking now that we’re all eating at home. I also just want to note that none of these are my recipes. TEX MEX CHICKEN & ZUCCHINI This was the recipe we made most recently (last night actually!) and it was SO good. This is a great dinner for any time of year so I’ll definitely be adding it to my usual rotation. It’s almost like a taco chili. Its packed with tons of veggies, protein and flavor. We ate it just plain but it would be really great with tortilla chips as a dip, over rice or on a tortilla and eaten as a taco. HEALTHY PICADILLO: Ryan is Cuban so back when we started getting creative with our cooking I wanted to make a cuban dish so we found this Healthy Picadillo and it’s one of my all time favorite dishes. I don’t eat a whole lot of red meat but I try to incorporate it into our dinners as much as possible for Ryan so we make this pretty often! It has a sweetness to it that you don’t really expect. ORECCHIETTE PASTA WITH CHICKEN SAUSAGE: When you want some really good comfort food that is a little on the healthier side, this is your dish. This is SOO good and while it is pasta it does have broccoli and chicken in it to give it some good nutritional value! I haven’t tried this yet but If you’re a mushroom person I think it would be incredible with some mushrooms in it! Also, to be even healthier we usually use the Banza Chickpea pasta. SEA BASS ALLA FIORENTINA: I love having some kind of seafood one night a week and usually we just stuck to salmon because I knew how to make it without a recipe. Once we started to get sick of salmon I wanted to venture out and try some new seafood but I was terrified to try cooking any-other fish without a recipe. This Sea Bass Alla Fiorentia recipe by Giada De Laurentiis is SO good and it was really easy to make. From now on whenever I’m trying to figure out how to cook something specific I look to Giada for a recipe!
